Harissa Salmon

Quick, simple & super healthy harissa salmon. Served with sweet potato cubes & vegan cheese. Harissa is a Tunisian hot chilli paste made from dried chillies, garlic, olive oil & roasted cumin.

Ingredients

  • 2 salmon fillets (skin on)
  • 2 tablespoons harissa paste
  • 1 tablespoon lemon juice
  • 2 large sweet potatoes
  • 2 tablespoon cooking olive oil
  • Chilli & garlic salt
  • Greek white vegan cheese
  • Rocket leaves
  • Black pepper

Directions

  1. Preheat your oven to 190/170c Fan/Gas 5.
  2. Wash & scrub potatoes. Lightly peel about half the skin off. Cut into cubes.
  3. Line a baking tray with parchment paper. Drizzle with 1 tablespoon olive oil. Sprinkle with chilli garlic salt & black pepper.
  4. Bake for 25-30 minutes. Flipping halfway.
  5. Place the salmon skin-side down on a large sheet of baking foil.
  6. Mix the harissa paste with the lemon juice & 1 tablespoon olive oil.
  7. Rub all over the salmon flesh.
  8. Bring the foil up either side, fold it over & seal at the sides. Cook in the oven for 8-10 minutes.
  9. Serve with rocket, crumbled cheese & black pepper.
