Chicken, Chickpea, Smoked Chilli & Tomato Curry

Quick, simple & super healthy chicken, chickpea, smoked chilli & tomato curry. Chicken is poached to make this a fantastic meal for those looking for weight loss.

Ingredients

  • 1 - 2 chicken breasts
  • 400g can chickpeas, drained
  • 1 smoked chilli & tomato stock pot
  • 1 tablespoon cooking olive oil
  • 1 onion, diced
  • 1 400g can chopped tomatoes
  • Frozen peppers, handful
  • Frozen peas, handful
  • 1 tablespoon tomato puree
  • 1 teaspoon medium curry powder
  • 2 teaspoons garam masala
  • 2 garlic cloves, crushed

Directions

  1. Make the stock in a small pan.
  2. Add the chicken & poach for 8 minutes.
  3. Heat the olive oil in a frying pan.
  4. Add onions & cook on a low heat for 2-3 minutes until soft.
  5. Add tomatoes, frozen vegetables, chickpeas, garlic, tomato puree, curry powder & garam masala.
  6. Bring to the boil, then turn down &  gently simmer for 10-15 minutes.
  7. Drain the chicken & shred into the curry.
